it has been a little bit since my last post. i have been super busy packing. chris and i are down to our last weeks. we have so much pack but so much more to go. its amazing really how many boxes it takes to pack just a few rooms. it seems like we have a ton more to do. I’m a little wore out buy it cause it looks like a never ending job. so a few times chris and i have got into yelling matches over what to do and where it goes. nothing serious but its been stressful.
one nice thing, chris got me a cordless keyboard and mouse now when i hook up the laptop to the tv i can relax with the keyboard on the couch. hehe. it actually quite nice. so i was happy to get it. so now its like having a 42 inch (the tv) computer monitor. lol. oh how i love it.
talked to my sister tonight. she is my wonderful sister who is helping chris and i get our condo. and she signs more papers tomorrow. she told us to get our paint colors together that we want so she can see about picking them up. them also about prices to clean the carpets and so forth. omg i am so very excited. i was jabbering like crazy on the phone, i could tell she kept waiting for me to finish so she could get a word in. lol.
i think that is about all that has been going on around here. between packing and figuring out things for the condo there isnt alot of time left for anything else. although there is a new Monopoly game at pogo.comthat is really fun. ok i’m out for now. l8r g8r.

so Chris and I are moving AGAIN! but for the last time. we will finally be home owners next month. closing is Sept. 3rd. we are very excited. omg the best part is the CONDO has a indoor pool. it is on beautiful land. almost like living in the country but in the city. we will be back in Portland where we want to be. oh did i mention that we are super excited? LOL.
so we have been slowly packing up things we aren’t using and i can’t believe how many boxes it takes just for a few items. i don’t think we are even half way done. i hate packing and unpacking but it is so worth it.

i just now finished watching the opening ceremony from Beijing. golly was it long, all 4 and a half hours of it, but i really liked all the lights. oh and the globe with the people walking on the side of it. i wondered how they stay straight on there. now i know they are held to cables but to be perfectly horizontal? i found that cool. i also liked the guys in green suits with all the lights on them. hehe. it was just an amazing show.
then at the end to see everyone walking out. i didn’t realize just how many different countries we had in the world. i was never good at geography or whatever subject it is, but gosh all the people. hehe. 303.8 million just in the US? damn. 647 atheletes is awsome. i really wish i were that talented.
if i could be in the Olympics i think i would love to be an ice skater or a high diver. i know they are totally different but i like the gracefulness of the skating and then the rush of the diving. ;o)
oh also not to mention just to see the United States walk out you had to wait 3 hours after the show started. although i guess it was better than having to wait by alphabetical eh? lol.

Here is a chicken recipe that also includes the use of popcorn as a stuffing - imagine that! When I found this recipe, I thought it was perfect for people who just aren’t sure how to tell when poultry is thoroughly cooked, but not dried out. Give it a try.
4-5 lb. Chicken
1-cup melted butter
1-cup stuffing (Pepperidge Farm is best)
1-cup uncooked popcorn (ORVILLE REDENBACHER’S LOW FAT)
Preheat oven to 350 degrees.
Brush chicken well with melted butter, then salt and pepper to taste.
Fill the cavity with the stuffing and popcorn.
Place in baking pan with the neck end towards the back of the oven.
Listen for the popping sounds.
When the chicken’s ass blows the oven door off and the chicken flies across the room, it’s done.
